Baking Fun - London Chocolate Cup Cookies

I had continued my CNY cookies venture last week in producing the London Choc Cup Cookies ^_^ The results turned out to be OK, hubby said it’s not enough sweet….hmmm, okay…..may be next time should increase the icing sugar volume. Anyway, it’s also very depend on the level of sweetness of the chocolate bar that you bought. So pandai-pandai ya …. Let’s check out the recipe below (refer to the recipe from my schoolmate):

The small paper cup

Ingredients (Approximately 50 cups):

Part [A]
Unsalted Butter, softened 125g
Icing Sugar 60g
Egg ½
Egg Yolk ½
Vanilla Essence ½ tsp

Part [B]
All Purpose Flour, sifted 150g
Almond Powder 100g

Filing:
50 Almonds

Top:
Chocolate 200g
Chopped Almond

Steps:
1. Preheat oven to 180’C degree.
2. Cream [A] with the mixer; fold in [B] to [A] gradually to mix and become a dough.
3. Spoonful the dough around 10-12g, wrap in a almond into each small dough, shape it into oval/round.
4. Place the wrapped dough into the cookies cup; bake for 15-20 minutes.
5. Melt the chocolate bar into syrup using the double boiler method (refer picture).
6. Place the appropriate amount of choc syrup on top of the cup cookies; follow by the chopped walnut.
7. Place the cookies into the fridge for about 5 minutes; and it’s ready to be served.

It's another simple recipe for you to try out :) Well, I think my hand is itchy again, probably want to make another CNY cookie tonight to wrap up my CNY bake this year ^_^
