Blink Blink X'mas & New Year Gifts ^^

Swarovski crystal, my all time favorite accessories ^^ This time, I’ve got 2 more added into my jewellery box. It’s the X’mas and New Year gift bought by Mr.Hubby :)

I remember my very 1st Swarovski pendant was bought at the Vivo City, Singapore in year 2008, that was a Heart Pendant with sport clear crystal in pave and a detailed back with 7 single set clear crystals. It hangs elegantly on a rhodium plated chain. I love that very much and until now, I am still wearing it and keeping it like brand new. The chain was once broken but luckily Swarovski managed to repair it for me, and it’s FOC :) [All Swarovski came with 2 years standard international warranty for you guys info.]

Now I am truly happy that I have additional 2 more into my collection, 1 is the Silver "Erika" Bracelet with Crystal Charms; and another 1 is the Alana Heart Pendant. *happy*

Mum's 65th Birthday Celebration

Woo~ almost forgot to post about this....hehe! It's my mum's 65th birthday celebration which happened on 8th Dec 2010, still within the birthday month ya ^^ The celebration took place at the nearest Chinese restaurant again - Six Happiness Garden Restaurant; the place where I celebrated Mother's Day this year with the "Poon Choi" dish (refer: http://about-uli.blogspot.com/2010/05/mothers-day-celebration-2010.html). Since their service and dishes is good, so we decided to come back again ^^

This year's celebration seems much more happier compared to previous one, probably it's because of it's close to my big. MiaoMiao was very funny this year, keep on looking for her dad and grandma to give "free" kisses....so cute! ^^ You will notice her cuteness when you check out the photos below.....hehe!

Baking Fun - Party Cupcake

I did this during the Christmas celebration with hubby and piggy gang on the past few days. It was my 1st time produce the icing cream but it seems not so successful, due to it's too watery.... because of this, I gotta quickly put the cupcakes into the fridge after decorated it in order to avoid the cream further melt away.

My cupcake turned out not so nice and tasted a bit hard :( I guess it needs more improvement next time. 1 of my piggy member given me 6/10 for the taste, but 10/10 from its outlook and my sincerity....muahhahaha! Let's check out the recipe below, may be you can try this out for New Year celebration as well ;-)

Ingredients:
• 110g Unsalted butter at room temperature
• 90g Caster sugar
• 110g self-raising flour
• 1tbsp Dutch-process cocoa powder
• 2 eggs
• 1 tbsp full cream milk

Method:
1. Preheat oven to 180 degree C.
2. Line paper cases in muffin tin.
3. Combine all the ingredients in a large bowl and beat with an electric mixer until smooth.
4. Spoon the batter into the cases.
5. Bake about 15mins; remove cupcakes and cool on rack. Once the cup cakes cool frost with icing and decorate as per your style.


Butter-cream Frosting:
• 240g pure icing sugar, sifted
• 120g unsalted butter at room temperature
• 2 tsp pure lemon extract
• 4 tbsp whipping cream

Method:
1. In an electric mixer, cream the butter until smooth and well blended. Add in lemon extract.
2. With the mixer on low speed, gradually beat in the sugar. Add the whip cream and beat on high speed until frosting is light and fluffy (about 3-4 minutes).

Baking Fun - Walnut Cookies

Phew~ Finally I've finished my wedding, and now it's time to catch-up with the back-dated post! Hopefully manage to share as much as I could, including my wedding actual day's photos....but that will take a little bit longer as the photos are still in processing by the studio.

Here my 1st cookies project - Walnut Cookies. My comment, tasted OK, but it's a bit too thick, I think next time need to flatten it more ^^

Ingredients:
All-purpose flour (100g)
Caster Sugar (50g)
Vege Oil (55g)
Eggs (10g)
Chopped Walnuts (30g)
Baking powder (1/4 tsp)
Baking soda (1/8 tsp)

Steps:
1. Preheat oven to 180 degrees C.
2. In a large bowl, cream the vege oil, eggs and caster sugar. Stir in the flour, baking powder and baking soda. Stir in the walnuts. Drop dough by spoonful, flatten it with 2 inches apart on aluminium foil/cookie sheets. (Note: I use my palm to flatten the surface, you can choose to use some other tools)
3. Use a brush and put a thin layer of the eggs on top of the flatten dough's surface.
4. Bake 12-15 minutes. Let cool on wire racks, and ready to serve.

Betrothal Ceremony (過大禮)

Woooo...time really flies. I still remember 2009, December month, I am busy in prepare my pre-wedding shootings. And now, 1 year later, it's my big day, my long-planned wedding ceremony has finally arrive~

18.12.2010 is the D-day, the day I officially married with the completeness of the chinese wedding customs =) This is not a scheduled post, I write this post on my pre-wedding day, no joke! Knowing the coming 2 days will be my busy day with the tea ceremony and dinner, hence I didn't plan to have the buffet catering at my mum's place. I just had the simple dinner with mum and niece just now; and now having my own sweet time to blog, and to take an early rest later. *Hope I can sleep well tonight* :)

How do I feel now? Calm, peaceful in mind, not very excited as well.....I think kinda weird to have this kind of feeling at this moment. Didn't expect to have this feeling on the pre-wedding day.......haha! Many of the FB friends congratulated me thru the FB, thank you so much! Some of the experienced bride commented I will be feeling touching, and more exciting tomorrow.....Well, wait and see then ;) Before ended with this post, share with you guys some of the pictures taken during the Betrothal Ceremony which happened in 2 weeks ago.

Baking Fun - Chocolate and Vanilla Marble Cake

While I am counting down on my wedding big day, I'm thinking to clear off my backlogs on baking post first ....hehe! This time is the Chocolate and Vanilla Marble Cake recipe which adopted from Rachel Allen, Bake. Got this done in 2 weeks back and I personally do not quite satisfy with the final product, it was a bit dry but hubby and friends said it was OK. Hmm...anyway, I felt the over-night's cake tasted much better than the freshly baked one, serious......

Do you guys know why? Haha......

Ingredients:
225g butter, at room temperature
225g caster sugar
4 eggs, at room temperature
2 tsp vanilla extract
225g self raising flour
50ml milk
50g cocoa powder, sifted

Method:
1. Preheat the oven to 180'C. Butter and flour the sides of a 20cm cake tin and line the base with greaseproof paper.

2. Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugar and beat until the mixture is light and fluffy.

3. Whisk the eggs and vanilla extract together in a small bowl. Gradually add the eggs to the butter mixture, beating all the time. Sift in the flour and baking powder and fold in gently to mix, then add the milk and mix gently to combine.

4. Tip half of the cake mixture into another large bowl and, into this bowl, fold in the sifted cocoa powder.

5. Place the cake mixtures into the prepared tin by alternating spoonfuls of the vanilla batter with the chocolate batter, then with a skewer or similar implement, gently draw swirls through the cake mixture to ‘marblise’ it. Don’t overmix or you won’t have that wonderful marble effect. Bake in the oven for 45 minutes or until a skewer inserted into the middle comes out clean.

6. Turn the cake out onto a wire rack and allow to cool before serving.

Baking Fun - Blueberry Cupcake

My 1st cupcake product ^_^ And yes! It's a successful one~ Been always buy the similar muffin from Starbucks and now I got a chance to do it myself~ Brought the final product to my office to share with some of my colleagues, and got the good feedback from them as well.....hehe! Probably next time I wanna try to add in some cheesy cube on top of it ^_^


Ingredients (Cater for 18 cupcakes):
Self-raising flour 200g
Almond flour 50g
Unsalted Butter 120g
Shortening 80g
Salt 1/4 tsp
Caster sugar 40g
Icing sugar 100g
4 Eggs
Full cream milk 60g
Blueberry Jam

Steps:
1. Pre-heat oven to 180'C.
2. On slow speed, cream butter and sugar.
3. Add eggs, one at a time and mix until blended.
4. Sift the raising flour, and alternating with milk.
5. Add in the almond flour and salt while doing step (4).
6. Mix the batter with 2 tsp of blueberry jam (you can put more depends on self preference).
7. When the mixture is done, spoon cupcake batter into the muffin cup until 80% full.
8. Spoon a little bit of the blueberry jam on top of the batter and gently draw swirls through the cake mixture.
9. Bake at 180'C, 45-50minutes.
10. Cool for 10 minutes and we are ready to taste it now!

Lovable Birthday Celebration 2010

Happy Birthday to me! Hehehe…..1 year older already, I should say I year mature instead :P

Had a blissful birthday celebration with hubby this year at the Kampachi, Equatorial Hotel. All this while, both of us are the fans for Kampachi’s soft shell crab and usually we went to the one located at Pavilion shopping mall. This time, hubby suggested that we try out the “original” Kampachi outlet at Equatorial, I guess no way for me to say “NO”, can’t resist the temptation of the soft shell crab ^_^

Abekawa Mochi (Rice Cake coated with Mixed Nuts) - it has a nice smooth, eat while its still warm....tasted superb especially with the top of so much mixed nuts....Yummy~
